There are rough saw horse for outside work and quality saw horses for inside finishing and shop work.
Some like them tall, while others prefer short saw horses.
You can build them out of common lumber and plywood or you can use hardwoods.

My Favorite Saw Horse Design
This is my favorite saw horse design.
These horses were built over 30 years ago. Built out of birch they have mortise and tenon joints with some additional triangular braces for added strength.
There is a sacrificial 2×2 screwed on to the top And that is covered in carpet to protect any prefinished work pieces.
Height wise they were built to be a couple of inches lower than a table saw top so they can and very often are used to make an off feed table.
They will carry a lot of weight, probable more than 2000#.
And best of all they nest together well, taking up little storage space in the shop or the back of my truck.
Not the kind of horses to be left out in the rain and they need to be chained up when not in use on the job.
They with definitely out last me.
